Homemade Granola Bar Recipe
My boss at my old job always had some very tasting granola bars with him. I asked him once where did he buy them from and he said that his wife made them… and of course, I wanted the recipe so I asked for it.
Please note that my boss is diabetic and, according to his nutritionist, these granola bars were good for him (i.e. low GI index)… so, don’t take my word for it though, if you have medical issues, please consult a medical professional first.
Here’s the recipe:
Preheat oven to 350F. Grease AND flour an 8×8 inch pan. (If you don’t grease as well as flour, you will never get them out of the pan. I use a bit of vegetable oil for the grease part.)
- 1/4 cup margarine or butter or vegetable oil
- 3 tablespoon honey
- 1/2 cup flour
- 1/4 cup brown sugar
- 1/2 cup rolled oats (quick cooking or regular but not ‘instant’)
- 1/2 cup granola or muesli or corn flakes or rice crisp cereal
- 1 cup total dried fruits/nuts/seeds
Melt honey and butter. Combine dry ingredients. Add honey mixture and mix until everything is moist. Add a bit of honey if it appears dry. Press into pan (wet your fingers and it won’t stick so much). Bake approx. 15 minutes for chewy granola bars and 20 min. for crunchy.
I did the math in term of nutritional intake, and this is what I got for the whole mixture:
- Calories: 1877
- Fat: 75 g
- Carbs: 283 g
- Protein: 31 g
Remember, this is for the whole mixture, so if you, say, make 10 bars out of it, divide these number by 10 to have the nutritional content of each bar.
